Apple Bell Pepper Muffins

The recipes for bell pepper muffins are usually not sweet, but why not? If you like bell peppers and want to confuse your taste buds, here is a recipe for muffins, elevating the natural sweet taste of apples and red bell peppers.

  • Prep time: 15 minutes
  • Cook time: 20 minutes (40 minutes, if baking separately).

Ingredients

2 ½ cups all-purpose flour

¼ teaspoon table salt

2 teaspoons baking powder

1 teaspoon baking soda

¾ cup granulated sugar

½ cup brown sugar

1 teaspoon vanilla sugar or 1 teaspoon vanilla extract

1 cup whole milk

½ cup vegetable oil

2 eggs

2 cups chopped apples

1 cup chopped red bell peppers

Confectioner’s sugar for topping.

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Line in a 12-count muffin tin with paper liners (or two, if you have the opportunity).
  3. In a large bowl, combine the dry ingredients: flour, salt, baking powder, baking soda, and set aside.
  4. In a separate bowl, whisk together granulated sugar, brown sugar, and vanilla sugar (if using vanilla extract, add it in the end), and add eggs, milk, and oil. Whisk until well combined (wet ingredients).
  5. Chop the apples and bell peppers.
  6. Fold the dry ingredients into the wet ingredient mixture and mix together until combined (overmixing is not a good solution).  
  7. Fold in the apples and bell peppers.
  8. Fill each muffin cup to ¾ full.
  9. Bake in a preheated oven for approximately 20 minutes, until the centers are set, verify with a wooden toothpick inserted in the center of the muffin.
  10. Let the muffins cool and right before serving, cover with confectioner’s sugar.

Notes:

  • The taste of the bell peppers is stronger the next day when the flavors are well absorbed.
  • I also dried the recipe by adding 1 teaspoon of cinnamon to the baking mixture. It tasted good, but I liked the version with only vanilla, best.
  • Always be careful, use appropriate safety measures, and read the manufacturer’s instructions before using electrical or other kitchen equipment or accessories. Adult supervision and oversight are essential in the kitchen!
